Homemade Bourbon Biscuits
The old classic, sometimes you just want something simple but tasty!!!!

Bakes 10 Biscuits
Ingredients
120g Plain flour
50g Butter
50g Light brown sugar
1 Tbspn Golden Syrup
0.5 Tspn Baking powder
3 Tspn milk
Buttercream
43g Butter
1 Tbspn Cocoa powder
100g Icing sugar
Method
Heat the oven to 180C.
Put the flour, baking powder and cocoa and light brown sugar into a mixing bowl and stir.
Rub the butter and golden syrup into the mixture until it resembles a sand like texture.
Add the milk one teaspoon at a time, until a dough is formed.
Cover the dough and chill in the fridge for 30 minutes.
Dust your work surface and start rolling out the dough, the biscuit will rise when cooking so as thin or as thick as you like, if the dough is sticky then roll it between two pieces of greaseproof paper.
Start cutting out your biscuits, (use a ruler it’s about 2cm across and 8 down, ensure you keep rolling the dough out until you have used it all up).
Use the back of a skewer to add the 8 dots onto the biscuits:)
Bake for around 13 minutes (check at 10), once they start to turn dark around the edges they are cooked.
Cool on a wire rack.
To make the filling add the butter, icing sugar and cocoa powder into a bowl and mix until combined.
Once the biscuits are cool you can start creating your sandwiches, you can pipe the filling on or just use a pallet knife to spread the filling on.
Sprinkle some caster sugar over the biscuits.
